Brown Sugar


Brown sugar is the sugar derived from sugar cane or sugar beet by partial purification of raw sugar or spraying of refined sugar with sugar syrup or molasses followed by subsequent drying and intended for direct human consumption.

The Codex Alimentarius requires brown sugar to contain at least 88% of sucrose plus invert sugar. Commercial brown sugar contains from 3.5% molasses (light brown sugar) to 6.5% molasses (dark brown sugar) based on total volume. Based on total weight, regular commercial brown sugar contains up to 10% molasses.

Other general requirements for brown sugars are:
– brownish in colour
– Free flowing crystals;
– practically free from dirt, foreign and extraneous matter; and
– Free from fermented, musty or undesirable odours.
